Unveil the layers of Filipino culinary history with the Galleon Trade: A Culinary Journey, presented by Diamond Hotel in collaboration with Chef Christopher Carangian. This unique food festival, running from June 26 to July 7, 2024, at the Corniche restaurant, offers an opportunity to taste history through dishes that defined the Galleon Trade era.
Galleon Trade Culinary Offerings
Chef Carangian, a fervent advocate for culinary heritage, transports diners back to the rich history of Filipino cuisine with recipes that span centuries. Delve into the Potaje de Adobado de Gallina, a chicken dish that traces its origins back to 1529 Mexico. Experience the evolution of adobo with Adobo de los Naturales, a 1613 recipe that combines pork and chicken in a dry adobo style. Don’t miss the Quilauin from 1794, described by Antonio Pigafetta during the first circumnavigation of the globe as the First Adobo. These historical dishes are not just meals; they’re stories on a plate, meticulously recreated to give diners a taste of the past.
Rediscover the Past Through Culinary Artistry
Chef Christopher Carangian, Founder and President of Razorchef Philippines and Punong Heneral of the Culinary Generals of the Philippines, is renowned for his dedication to reintroducing traditional Filipino dishes. His efforts in the kitchen are as much about education as they are about gastronomy, aiming to foster a deeper appreciation for the Philippines’ rich culinary heritage.
He will guide diners into the origins of Filipino cuisine through the dishes he will showcase at the Corniche lunch and dinner buffet priced at Php3,880 net per person.
